Green Goddess Chicken Salad
It's no secret that at reCAP Mason Jars, we are passionate about re-purposing within our everyday lives - including our recipe for Green Goddess Dressing. I loved it on a hearty green salad, poured over thinly sliced cucumber, and as a dip for crackers and veggies, though my favorite so far is with this easy to prepare Chicken Salad.

Ingredients
- 1 cup(s) rotisserie or baked chicken (leftovers work great!), minced
- 1 carrot, finely chopped
- 1 tablespoon(s) celery, minced
- 2 tablespoon(s) fresh parsley, chopped
- 2 tablespoon(s) pine nuts
- 1/4 - 1/2 cup(s) Green Goddess Dressing
Instructions
- In a medium bowl, add the chicken, carrot, celery, pine nuts, and dressing.
- Mix until well incorporated.
- Add the Green Goddess Dressing to the salad with The Original reCAP Mason Jars pour cap. Use more dressing for a creamier chicken salad.
- Serve on or with crackers as an appetizer or toast potato bread for a savory and crunchy sandwich!
